INGREDIENTS:


1 tablespoon each butter and oil
Pinch of red chlli flakes (optional)
2-4 cloves course chopped garlic

1 coursely chopped small red onion

3-4 roasted red peppers (jarred)

1/2 to 1cup chicken stock

1/2 cup half and half cream

Fresh chopped parsley

Fresh chopped basil

Salt and pepper to taste

1/2 cup Grated Parmesan cheese 

1tablespoon good quality balsamic vinegar

1 package pasta of choice (cooked)


OPTIONAL:

1 onion & 1 red pepper chopped and sauteed

2 Portobello mushroom cut and sauteed




Instructions:


In shallow pan brown equal parts butter and oil.

Add a pinch of chili flakes (optional)

To the pan add the chopped garlic and onions

(dont worry about size, it will all be blended)

let the onions and garlic brown slightly.

Add 3-4 roasted red peppers from a jar. be sure to remove excess liquid.

Heat through and add the mixture to a blender and puree to a creamy texture.

Return mixture to the pan and continue to heat on low heat for a few minutes.

Add the chicken stock and the cream

(you can use milk or heavy cream if you prefer)

Mix well and add in the parmesan cheese balsamic vinegar. A good quality vinegar is the key.

Turn of the heat.

Add in the fresh chopped parsley and basil.

Season with salt and pepper to taste. (keep in mind that the cheese and the stock will add to the saltiness)

And that is it. Now how long did that take? 


You can go crazy with variations. all kinds of pasta work really well. I find tubular ones work well to hold onto the sauce.

I love adding veggies to my pasta, so I go ahead and add sauteed onions, peppers and portobello mushrooms and spinach, but all veggies

and even grilled chicken, shrimp work really well in this recipe.


I love to garnish with a little parmesan, or better yet a bit of fresh feta. yum yum!!!
