Nina's Butter Chicken

INGREDIENTS:


For Marinade:

4 chicken breasts (cut in 1 inch cubes)

2 tablespoons Greek yogurt

2 teaspoons turmeric

1 teaspoon red chili powder

1 teaspoon cardamon powder


For the Sauce:

1 Jar of Kissan Butter Chicken Sauce

1 tablespoon cooking oil

1 cinnamon stick

2 cardamon pods

1 bay leaf

1 tablespoon melted butter or ghee

1 medium onion pureed

1/2 teaspoon each minced garlic & ginger

1 teaspoon red chili powder (optional)

1 tablespoon fried fenugreek leaves

1/2 cup heavy cream

1/2 cup water (optional)

fresh chopped cilantro




Preparation for marinade:


Marinate the cubes chicken pieces with all the ingredients listed above for an hour or more in the fridge.

I prefer to BBQ the chicken pieces on skewers before adding to the sauce for the authentic tandoor cooked flavor.

But this time grill the chicken in a cast iron skillet on very high heat to get that smoky grilled flavor. (set aside)

**You can omit this step and add the chicken raw to the sauce for a quick dish too if you prefer. 



Instructions to make the sauce:


In a large pan add the oil and heat on medium, add in the cinnamon, cardamon, and bay leaf. Let all this sizzle a little to release all the aromas.

Add in the pureed onions and saute until light golden brown. 

When the onions are golden brown, add in the garlic and ginger and continue to cook to get rid of the raw flavor.

For a little extra heat add as much red chili powder you like. I like the heat, but you can totally omit this step.

Add in the entire jar of the Kissan Butter Chicken Sauce and the fenugreek leaves, turn down the heat, cover and let simmer for 5-10 minutes.

Don't forget to stir now and then.

At this point add in the grilled, and the butter. If you like a little more if a soupy gravy go ahead and add half a cup of water.

Stir well and continue to simmer for another 5-10 minutes.

**(If you chose not to grill the chicken, cook until the chicken is firm to the touch - usually 20 minutes)

Turn off the heat and add a swirl of heavy cream and cilantro right before you serve.


Super easy and OMG so flavorful. the Kissan Butter Chicken sauce is the secret ingredient...SHHHH don't tell your guest you had a little help for a jar. This Butter Chicken is best served with buttered naan and basmati rice.
