INGREDIENTS FOR MARINADE:

1 1/2 lb Black Tiger Prawns (peeled & deveined)

1 tablespoon olive oil

4 cloves garlic (finely minced)

2 teaspoons red chili powder

salt & pepper to taste

1 pinch of smoked paprika (optional)

1/2 tablespoon dried parsley flakes

juice of 1/2 of a fresh lime


Keep on hand:

Wooden skewers (soaked in water for 1/2 hour)

Melted butter

Fresh chopped parsley



Combine all the marinade ingredients in a large bowl, add the prawns, stir and set aside for about half an hour.


Soak around 15-20 wooden skewers in warm water for half an hour (so that they do not burn when you grill)


melt a little butter in a pan and add fresh finely chopped parsley to it. and set aside.


Skewer 3-4 prawns on each stick depending on how long your skewers are.


You can either grill these prawns on the BBQ or on a cast iron grill. either way the taste is amazing.

Grill on high medium high heat for 3 minutes on each side. (be sure to oil your grill before hand) 


Brush a little of the butter and parsley mixture on the prawns before serving for a beautiful sheen.


This dish is so versatile. The prawns are amazing on a salad, with rice, on pasta... in tacos...I could go on and on.
