INGREDIENTS:

8-10 hard boiled eggs

1 tablespoon oil

1 teaspoon mustard seed

6-8 fresh curry leaves (optional)

1 large onion finely chopped

1 table spoon each garlic & ginger paste

1 teaspoon turmeric

2 teaspoons red chili powder (or to taste)

3-4 teaspoons cumin & coriander powder

2 teaspoons gram masala

2 teaspoons tomato paste

salt to taste

fresh chopped cilantro & green onions







Spicy Curried

For the perfect boiled egg, boil them for 12 minutes (don't forget to set your timer) See the video on my homepage.


While your eggs are boiling...

In a shallow pan add oil and heat on high add the mustard seed and let them sizzle in the oil until you hear them pop like popcorn.

Add the onions and bring down the heat a little, at this point add in the curry leaves as well, and cook the onions until they are translucent.

add all the dry ingredients, turmeric, chili powder, cumin & coriander powder, salt and that gram masala, stir in the tomato paste, garlic and the ginger, and add a little water to help it along if you feel the need. 

Cook until you see that the oil has started to separate from the mixture.


By now your eggs should be cooked, drain and peeedl as soon as possible.

Cut into halves and add to the gravy mixture. Mix very gently so that you do not damage the yolks of the eggs.

Turn off the heat and garnish with the fresh cilantro and green onions.


That took what... 12 minutes? lol

Totally amazing served with Naan or Roti! enjoy!





I always have eggs in the fridge. On nights you want a super quick and easy 12 minute meal... this is your best bet!
