INGREDIENTS:
1 small onion finely chopped
1/4 of each color bell peppers (red, yellow green)
1 small carrot cubed
1/4 cup each frozen peas and corn
2 cinnamon stick
2 bay leaves
3 of each cardamon pods & cloves
1 handful of almonds (optional)
2 teaspoons each garlic and ginger
1 Indian green chili finely chopped (optional)
2 cups rice washed and soaked in cold water
1 tablesppon each oil and ghee
salt to taste
1 teaspoon turmeric
First wash and soak your rice in cold cold water for about 20 minutes
Add oil and ghee to coking pot with the cinnamon sticks, cardamon pods, cloves and bay leaves. let all that sizzle for a bit.
Add it the onions and all the veggies and the almond if you like, which are totally optional.
let all that cook down a bit until the onions become translucent and the carrots have soften
In the mean time drain all the water from the soaking rice.
Add the drained rice to the pot and stir, add in the turmeric, garlic, and ginger,
add enough cold water to cover the rice and add about an inch more from the level of rice.
cook in high until water starts to boil, uncovered.
turn down the heat to medium until almost all of the water has gone.
at that point cover and cook on low heat for 5-8 minutes until rice is tender and all water has gone.
That's it...you are done!
Garnish with fresh chopped cilantro
Best served with yogurt or as a side dish to your favorite Indian main dish. Goes will with both vegetarian and non-veg dishes.
